October 16: Hollandaise – Master hollandaise – everyone’s favorite mother sauce! You will learn to make crispy shrimp fritters paired with a spicy homemade aioli dipping sauce. October 23: Master Roux & Thickening Agents – Learn when to use cornstarch and when to reach for tapioca flour. You will make a dreamy Mexi mac loaded with seasoned ground beef, fresh herbs, roasted corn & red onion salsa plus LOTS of cheese! We’ll bake homemade focaccia to dip in bowls of creamy poblano soup. Finally we’ll end the night by preparing a heavenly pumpkin cheesecake & harvest granola trifle.
